As a seasoned culinary educator at Kendall College and vice president of Laureate International Universities Center of Excellence in Culinary Arts, Chris Koetke regularly travels across five continents. His recent sojourns to Ecuador, China, Chile, Mexico, Malaysia, Turkey and beyond have unleashed new flavor experiences and ingredient concepts that have already begun to birth new, tantalizing foods for American consumers. As part of the session, Chris will share will take attendees on an adventure to unearth the specific international flavors, ingredients and products that have the power to go “mainstream” in the United States. Additionally, he’ll instill within attendees a sense of passion and understanding of how to integrate these different ideas, flavors and concepts into our current food culture and, specifically, new product development.

The schedule will feature up to 5 concurrent technical tracks. Each track will be devoted to a specific application challenge (beverage, baking, dairy, emerging ingredients, etc) or specific ingredient functionality (gums, starches, emerging ingredients, etc.).
Applications Lab Sessions
The interactive Applications Lab Sessions will feature the use of product samples to more effectively demonstrate an ingredient’s functionality, or its application in a finished consumer product or model system.
The Application Lab sessions are longer, more hands-on, interactive, in-depth and comprehensive than the traditional sessions. Tuesday morning is dedicated to just Application Lab Sessions.
